RECIPES || Energizing Quinoa Salad

Cook once, eat multiple times! This is the perfect meal to make with your leftover quinoa, and it will stay fresh in your fridge all week. This salad is not only delicious, it also offers a variety of protein, fiber, and nutrients. Ok…let’s eat!

Prep Time: 15 minutes

Serves 8

– 2 cups cooked quinoa
– 1/2 cup chopped organic radishes
– 1/2 cup chopped organic cucumber
– 1/2 cup chopped organic celery
– 1/2 cup chopped organic red onion
– 1/2 cup chopped fresh organic parsley
– 1/2 cup chopped organic red bell pepper
– 1 tbsp. organic, cold pressed olive oil
– 2 tsp. balsamic vinegar
– 1/2 tsp. sea salt

Combine all ingredients together into a big bowl, mix well and enjoy! Serve room temp or chilled.

Tip: Garnish with organic cherry tomatoes and shredded garlic cloves
