Soba noodles are a wonderful way to get your pasta fix and because these noodles are made from buckwheat, there is more nutrition and less empty calories than in plain pasta. This dish is the perfect opportunity to cook once and feed yourself and for family for the entire week. Ok, let’s eat!
Prep Time: 20 minutes
Cook Time: 15 minutes
-8 oz. soba noodles
-6 c. water
-1 bunch of chopped sunflower sprouts or pea shoots
-1/2 c. chopped red radishes
-1/2 c. chopped celery
-1/2 c. chopped cucumber
Place soba noodles into a pot with 6 cups of boiling water. Cook until tender, no more than 8 minutes. When finished boiling, rinse with cold water. Mix the vegetables and soba noodles.
-1/2 c. finely chopped fresh basil
-1 tbsp. toasted sesame oil
-1/4 c. tamari soy sauce
-2-inch piece of grated fresh ginger
-juice from 1/2 lemon
Mix all of these ingredients, then pour over the noodles
Tip: Chill salad before serving. Also, dressing can be added when you’re ready to eat.
