RECIPES || Summer Corn Salad

Did you know that corn is one of the most popular and versatile vegetables? It’s also a good source of several nutrients. There are many healthy and delicious ways to make corn. Here’s an amazing recipe for corn salad. Ok…let’s eat!

Prep Time: 20 minutes
Cook Time: 10 minutes
Serves 6

-4 ears of corn

-1/2 small red onion

-1/2 small green pepper

-1/2 small red pepper

-1/2 bunch cilantro

-1 tbsp. olive oil

-1 c., sliced in half, cherry tomatoes

-juice of 1 lemon

Boil corn in a large pot for 5-10 minutes. Remove from pot and cool by running under cold water. Cut kernels from the cobs and place in a large mixing bowl. Finely dice the onions and peppers, mince the cilantro and add all the veggies to the corn. Add oil, sea salt and pepper and mix well.

Tip: Corn can also be grilled for more flavor.

The picture above seems to have a leafy vegetable thats not cilantro. What is it? And why isnt it in the recipe?

Thanks for your comment. This recipe can be varied with a variety of fresh herbs, try basil or fresh parsley for a brighter flavor!
