RECIPES || Millet Mashed “Potatoes”

It’s officially Fall, so what does this mean? We’re all going to be craving comfort food. When the seasons change so do we, it’s the way Mother Nature intended it because life is cyclical. However, when this change occurs, most people tend to gravitate toward heavier foods. Move into this holiday season with Awareness. There are lots of healthy and delicious alternatives to supply your body with the nutrients and comfort food it’s craving without sacrificing taste! OK…Let’s Eat!

Prep Time: 5 minutes
Cook Time: 30 minutes
Serves 6

-1 c. millet

-2 1/4 c. water

-1/2 medium cauliflower, sliced

-1/2 tsp. sea salt

-2 cloves garlic, sliced

-1 tbsp. extra virgin olive oil

-1 tspn. umeboshi vinegar

-handful of chopped parsley

Wash grains. Bring water to a boil. Add grains, cauliflower, garlic, and salt. Reduce heat to low and simmer covered for 20 mins., or until grains are cooked and water is absorbed. Turn off heat and let sit, covered for 5-10 mins. Add remaining ingredients and mash with potato masher, or mix in blender or food processor. Garnish with chopped parsley and serve.

TIP: For extra rich and delicious mash, roast the garlic cloves in olive oil over low heat while the grains are cooking.
