Part of eating healthy involves developing good habits. This roasted eggplant dish is simple and delicious. When you have food that you can prepare in advance and eat throughout the day, it’s easy to make the right food choices. Portion size and smart food choices are two great habits to have!

1 medium eggplant
1 red pepper
1 small onion
2 garlic cloves
1 lb ground turkey or chicken (omit if you’re vegetarian)
1 cup cooked brown rice

Cook ground turkey, add brown rice and set aside. Chop all veggies into 1 inch cubes, toss with salt, pepper, olive oil and roast in 400 degree oven for 40 min. Combine vegetables with the ground turkey and rice, then heat thoroughly and enjoy!
