RECIPES || Salmon Cakes

Cooking time: 10 mins
Serves 4

– 4 oz. cooked salmon
– 6 rice crackers
– 1/2 onion
– 2 cloves organic, minced garlic
– 1 tbsp fresh, organic lemon juice
– dash of black pepper
– dash of coriander
– 1 tbsp organic, cold pressed, extra virgin olive oil

Break salmon and rice crackers into small pieces, mix all of the ingredients together, create 3-4 small patties, refrigerate for 1 hour. Heat oil on high in a medium skillet, quickly fry both sides of each patty for 3-4 minutes.
TIP: Serve with brown rice and sliced lemon
